Seriously Basic Roasted Chicken and Root Vegetables Recipe

Are you still wondering what to serve on Christmas?

I just made this for my guests and yummmmmmm!!!

I got the recipe from Oprah’s website.  It was seriously so easy and delicious!

Seriously Basic Roasted Chicken and Root Vegetables Recipe

Servings: Serves 4

Ingredients

1 whole chicken (4 pounds)

1 Tbsp. and 3/4 tsp. kosher salt

3/4 tsp. crushed black pepper

3 Tbsp. olive oil

1 lemon

6 sprigs fresh rosemary

1 pound carrots , cut into 3-inch sticks

1 pound parsnips , cut into 3-inch sticks

1 pound small red potatoes , halved

Directions

Heat the oven to 400°.

On a sheet pan, toss the carrots, parsnips and potatoes with 2 tablespoons of oil, 4 sprigs rosemary, 3/4 teaspoon salt and 1/4 teaspoon pepper.

 
Rinse and pat dry the chicken and season with the remaining salt and pepper, then rub with 2 tablespoons of the oil.

Pierce the lemons several times with the tip of a paring knife and stuff, along with 2 sprigs of the rosemary, into the cavity of the chicken.

Using cooking twine, tie the legs together.

 
Nestle the chicken among the vegetables and put in the oven—with the chicken's legs toward the back of the oven.

Roast, stirring the vegetables once, until the chicken is cooked through (the internal temperature reaches 165° in the thickest part of the thigh), 55 to 60 minutes.

Carve and serve with the roasted vegetables.

I roasted my chicken with red and sweet potatoes, carrots, onions, lemons and rosemary and I served this with a spring salad and fresh green beans and asparagus with hollandaise sauce.  So good!

I will be making this again and again…it’s that good!

This would be great for Christmas or any other occasion or just a nice family dinner.

  1. This may sound crazy but we BBQ tri-tip for Christmas each year! Yep...we don't have the cold or snow here in So. Cal. and we might even eat outside on the deck if it's a sunny day!! We'll definitely have way TOO much to eat, too!

  2. Yum, that does sound good. I usually stuff my chicken with bread stuffing. For Christmas I am making Prime Rib with mashed potatoes and veggies.

  3. That sounds so yummy. We do the traditional Turkey, mashed potatos, stuffing, green beans, etc. Some years we also have a ham, but this year we are saving the ham for New Years dinner.
