Homemade Whole Wheat Pancakes


On weekends, our family loves to make big breakfasts.

We are so rushed in the mornings that we usually have a quick protein & fruit smoothie so it's a nice change.

This is one of our all time favorite pancake recipes.

The original recipe is from my Better Homes & Gardens cookbook but I tweaked it to make it healthier.



Bonnie's Homemade Whole Wheat Pancakes

1 cup whole wheat flour (I grind it myself)
1 T organic sugar
2 t baking powder
1/4 celtic sea salt 
1 beaten egg
1 cup organic milk
2 T organic coconut oil


Directions

  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.



Topping

For the topping, I just heated a bag of frozen raspberries!

I also added a hint of organic whipped topping!

    I have toyed with this idea for years, but thought that the grinding machines were too expensive. I googled yours and it is on Amazon for $140.00. How long have you used this machine?
    If it is a good machine I definitely would like to buy one. Thanks so much for sharing all your great food ideas!
    PS I work outside of the home as well, and I cheat and mix my dough in a bread maker and then make rolls or bread. It works great and saves us $$$.
